Make Amazing BBQ Pork Ribs Without a Smoker!

Hey guys! Here in the Midwest, winter is in full swing. And what that means for most of us is no grilling or smoking. The weather makes it too hard to control cooking temperatures plus, who wants to stand outside in the cold? One of my favorite grill recipes is BBQ Pork Ribs. You can get tasty, smokey and tender ribs without a smoker or even a grill! How you ask? I’ll tell you!

The unsung hero here is the oven. That’s right, the oven. And I know what you’re thinking, no way can you get good BBQ Pork Ribs outta the oven! Normally I would agree but I gave this method a try and was shocked to find it delicious! The secret? The wrapping technique, seasoning, time & temp and last but not least, liquid smoke.

Swaps & Specs:

  • I use Legg’s BBQ seasoning & rub #107 to season pork when I don’t feel like making a rub completely from scratch. Give it a try, It’s awesome! (It can be ordered off Amazon as well)
  • Wrap each individual rack of ribs tightly in tin foil once they are seasoned.
  • Season with your favorite BBQ seasoning blend or experiment with something new!
  • Be sure to remove the membrane from the back of the ribs! It’s easier than you think and a definite must!
  • Low and slow is the key for tender and juicy ribs! Set oven on 300* and let it go for approximately 2-3 hours. It depends on how many rib racks you have and the desired doneness you like.
  • While being able to smoke meat all day sounds amazing, some of us don’t have that kind of time. Ever heard of Liquid Smoke? Get acquainted if you know nothing about smoking food or if you just lack the desire to do it.

BBQ Pork Ribs are great on the grill but if like me you wish to nosh upon this dish more than just a couple times a year, try this version. It delivers smokey, tasty and tender ribs without a grill and fuss. Do an experiment and make them my way first. Tell no one how you made them, then ask what they think. I doubt your family or friends will be able to tell the difference, but I can bet they will ask for the recipe!

BBQ Pork Ribs

Equipment

  • Large sheet pan
  • Heavy duty tin foil

Ingredients
  

  • 2-3 racks pork ribs baby back
  • 3/4-1 cup light brown sugar
  • 4-6 tbsp. yellow mustard
  • 1/2 cup BBQ seasoning
  • 1 stick butter
  • 4-6 tbsp. liquid smoke
  • 2 cups BBQ sauce

Instructions
 

  • Heat oven to 300°. Peel membrane off the back of the ribs before seasoning. You can do this by grabbing it at one end and pulling slowly across until you get to the other side.
  • Lay 3 pieces of foil down. Make sure they are longer than the rack of ribs by about 4" on each end. Grab a rib rack and lay it underside up. Brush with liquid smoke until fully covered. Then squirt 1 1/2 tbsp. mustard on the ribs, and spread evenly to coat.
  • Next add the BBQ seasoning and rub into the meat. Then add some brown sugar and rub in. Flip ribs and repeat the process. Once done, place little pats of butter all over the ribs.
  • Roll foil up lengthwise first then do the ends. Repeat with all the racks of ribs. Once wrapped, place on a large baking sheet pan. Bake for 2 1/2 hours.
  • Remove from oven. Set oven to broil. The meat should be pulled back from the bone a bit. At this point use the drippings to make a awesome BBQ sauce or use store bought. Place ribs on a clean baking sheet and and slather in sauce and broil for 2-3 minutes on each side.

Notes

  • Can use any BBQ seasoning or sauce you like!
  • Use spare ribs, baby-back or St. Louis style cut ribs.
  • Use the dripping to make a delicious BBQ sauce!
  • Enjoy ribs anytime of the year and with very little fuss!
