Captivating Thanksgiving Recipe Classics your family will love
Hello everyone! Thanksgiving is just right around the corner now and many of us are still making turkey dinner even if it’s a smaller version of years previous. These Thanksgiving Recipe Classics are my version of what I serve every year as mentioned in my Thanksgiving planning post . Of course as all recipes are, they are all open to interpretation and ingredient swaps.

- Green bean casserole

- Mac-N-Cheese

- Glazed carrots
1. Roast turkey and gravy
- This is the star of the thanksgiving table! The recipe calls for the turkey to be brined and it is good for a whole turkey or just a turkey breast.
- Use the cooking liquid for the bottom of the pan will help you make the best flavored gravy!
Roast Turkey and Gravy
Equipment
- large container to brine in
- roasting pan
Ingredients
- 1 whole turkey sized for how many you are serving
- 8 cups vegetable broth
- 6 oranges, quartered
- 4 large onions, quartered
- 1 stick of butter softened
- 2 tbsp. dried poultry seasoning
- 2 tbsp. vegetable oil
- 1 cup salt
- 1/4 cup whole peppercorns
- 3 dried bay leaves
- 1 each bunch fresh herbs: rosemary, thyme, sage and parsley
- 1/2 cup sugar can be white or light brown
- 2 cups chicken broth
Gravy Ingredients- Optional
- 3 tbsp. butter
- 3 tbsp. flour
- 1 3/4-2 cups reserved cooking liquid from roasted turkey
Instructions
Brining Instructions
- In a large saucepan, add: veggie broth, 3 of the quartered oranges, 2 of the quartered onions, peppercorns, salt, sugar, 2 bay leaves and half the fresh herbs. Bring to a boil. Simmer 10 minutes. Remove from heat and let cool.

- Place turkey in container for brining. If it will be outside of fridge you will need to add ice to maintain food safe temperatures. Add cold brine to turkey in container and cover with water until entire turkey is covered. Breast side down if possible. Brine it overnight or at least 8 hours.
- When done, discard the brine and remove the turkey. Pat it dry and let it come up to room temperature for 30 minutes.
Roasting Instructions
- Preheat oven to 500°. While that is heating up, Mix softened butter up with the poultry seasoning. Spread all over meat under the skin. Stuff turkey with rest of herbs, oranges, onions and one bay leaf. Rub whole bird with oil. Place in roasting pan. Add chicken stock to bottom of pan.
- Roast at 500° for 30 minutes. Then reduce temp to 350° and roast for 2 1/2 hours or until thermometer says 165°.
- Remove from oven and immediately cover loosely with foil for 30 minutes before carving.

Gravy Instructions- Optional
- Once the turkey is done roasting and while it is resting you can use the cooking liquid to make a delicious gravy. Using a baster, suck up about 1 3/4-2 cups of the cooking liquid and put in a spouted dish.
- In a skillet, over medium heat, melt butter then add flour and cook for 1-2 minutes. Slowly add in cooking liquid, whisking constantly until all the liquid is smoothly blended in or until desired consistency. Cook another 5 minutes. Pour into a gravy boat or other spouted dish.
Notes
- If your roasting pan lacks a grate in the bottom of it, add cut up onion, carrots and celery for the turkey to sit on so it isn’t submerged in the chicken broth at the bottom of the pan.
- You can also sprinkle the turkey skin with rotisserie seasoning or any other spice blend you like.
2. Scalloped corn
- A great side dish that is great for many occasions, not just the holidays! We have had it at BBQ’S, birthday parties and potlucks.
- The sweet corn and salty topping make this one an all time favorite for everyone in our family.
Scalloped corn
Equipment
- 2 quart baking dish
Ingredients
- 1 bag frozen whole kernel corn
- 1 medium onion, chopped
- 1/4 cup water
- 1/4 tsp. salt
- 2 large eggs, lightly beaten
- 1 can creamed corn
- 1 sleeve of saltine crackers, crushed hold out 1/2 cup for topping
- 1 cup milk
- 2-3 tbsp. butter or margarine, melted
Instructions
- Heat oven to 325°. In a saucepan add frozen corn, water, salt and onion. Cook on high until boiling then reduce heat to simmer covered for about 5 minutes. Once veggies are crisp-tender drain thoroughly.

- When you crush the crackers make sure to reserve 1/2 cup of crackers for the topping. The rest goes in a large bowl with the creamed corn, eggs, and milk. Mix. Add in the drained veggies and mix again. Pour mixture into a greased baking dish.

- In a smaller bowl mix the melted butter and remaining 1/2 cup of crackers. Then sprinkle it over the top of corn mixture. Place in oven for 35-40 minutes or until a knife inserted near center comes out clean.

- Let it stand 10 minutes before serving.

Notes
- Can be made the day before in advance up to the baking part, then baked off when ready for it.
3. Stuffing
- This classic Thanksgiving recipe is stuffing in name only. It is technically a dressing, but it can be stuffed into a turkey. (This is no longer advised by the FDA, but IMO to each their own)
- Fresh veggies and herbs makes this stuffing super flavorful.

Equipment
- large mixing bowl
Ingredients
- 1 loaf Italian bread, cut into small cubes
- 1 bag Pepperidge Farm stuffing mix (crumb one) Blue and white bag
- 4 stalks celery, chopped
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 3 cloves garlic, chopped
- 2 large eggs, lightly beaten
- 2 sticks butter
- 2 cups chicken broth
- 1 tsp. rosemary 1 tbsp. if fresh
- 1 tsp. garlic powder
- 1 tsp. poultry seasoning
- 1 tsp. sage 1 tbsp. if fresh
- 1 tsp. oregano
- 1 tsp. thyme 1 tbsp. if fresh
- 2 tbsp parsley 3 tbsp. if fresh
- 1 tsp. each salt and pepper
Instructions
- Heat oven to 350°. In a large frying pan, melt butter and saute onion, green pepper, garlic and celery until translucent. Meanwhile, In a really large bowl mix the fresh bread cubes and the bag of Pepperidge farms stuffing together. Set aside.

- Once the veggies are done, pour whole thing over bread cubes. Mix well but gently. Add in the remaining herbs and eggs and mix again.

- Add chicken broth all over until bread is almost wet. You do not want it soaking or it will never cook properly. Once that is well mixed, pour into a baking dish.

- Bake for 40 minutes or until tips of some cubs are golden brown.

Notes
- This recipe is called stuffing out of habit but technically it is a dressing. Stuffing turkeys is no longer recommended by the FDA, however to each their own. This recipe can absolutely be stuffed in a turkey if you wish.
4. Green Bean Casserole
- This version does not use the condensed soup that our Mothers and Grandmothers used, and that’s a good thing!
- The caramelized onions give so much flavor to the dish.
- This recipe classic might not be traditionally made but you won’t miss the other version I promise!
Green bean Casserole
Equipment
- 13×9 baking dish
Ingredients
- 1 lb. fresh green beans, snapped in half ends trimmed
- 1 stick butter divided in half
- 8 oz. white mushrooms, cut in half, then sliced thin
- 1 large onion sliced thin
- 4 cloves garlic, minced
- 2 tbsp. flour
- 1/2 cup heavy cream
- 2 cups half and half
- 1/2 cup fresh grated parmesan cheese
- 1 1/2 tbsp. soy sauce
- 1/2 tsp. salt
- 1 tsp. fresh ground black pepper
- 1 1/2-2 cups French's Fried Onions
Instructions
- Get a large pot of water boiling for the green beans. Add a sprinkle of salt to that. In a large skillet, melt 4 tbsp butter and add onions. Cook until caramelized which takes about 7 minutes. Heat oven to 350°.
- Meanwhile, cook green beans for about 8-10 minutes. Drain them and place in baking dish.
- Then add the mushrooms and garlic to that and continue cooking for another 4-5 minutes. Then transfer mushroom onion mixture to a bowl.
- In the same pan, melt the rest of the butter and add the flour. Mix it in and cook for about 2 minutes. Very slowly add the heavy cream, whisking quickly to make sure it's incorporated without clumps. Add in the half and half in the same manner. Then add the parmesan cheese, soy sauce, salt and pepper and cook for 4-5 minutes.
- Mix the mushrooms and onions into sauce then pour it over the green beans. Stir gently to coat and smooth into a even layer in the pan. Bake uncovered for 20 minutes.
- Remove from oven and cover the top with French's Fried Onions, Bake another 5 minutes or until onions are golden brown.

5. Glazed Carrots
- These carrots weren’t always a side at my thanksgiving table but in recent years I have really come to love them. They are sweet and spicy at the same time. The spicyness can be cut down or completely out.
- Add in fresh herbs to tie the dish into what you are making! Several herbs compliment them very well.
Glazed Carrots
Equipment
- large skillet
Ingredients
- 1 bag carrots, peeled, cleaned and chopped into rounds
- 1/2 cup light brown sugar
- 1 tbsp. honey
- 1/8 tsp. cayenne pepper
- 4 tbsp. butter
- 1 tbsp. olive oil
- 1/2 tsp. each salt and pepper
Instructions
- In a large skillet, melt butter down and then add carrots, oil, salt and pepper. Cook for about 15-20 minutes or until they start to caramelize and soften.
- Once they are almost cooked add in rest of ingredients. Cook for another 5 minutes or until desired doneness is reached.

Notes
- You can add in fresh herbs like rosemary, thyme and parsley. Pick one herb and add it in during the glazing part of the cooking process.
6. Cranberry Sauce
- Last but certainly not least of the Thanksgiving recipe classics is cranberry sauce. Now I had normally enjoyed the canned jellied version of this until I tried this recipe out. After a few tweaks, this recipe was born.
- It has subtle orange hints and not overly sweet but the cranberries won’t make your lips pucker either!
Cranberry Sauce
Equipment
- sauce pan
Ingredients
- 12 oz. fresh cranberries
- 3/4 cup sugar
- 1 cup orange juice, no pulp
- 1/4 tsp salt
Instructions
- Put sugar and orange juice in a pot and bring it to a simmer.
- Add the cranberries and salt in, then simmer for 8-10 minutes. If you want it the cranberries more whole, start with 3/4 of the cranberries first and once they begin bursting then add the other 1/4 of the cranberries in.

- Once you reach the desired consistency, let it stand at room temperature until cooled. At that point you can put it in a bowl and refrigerator until it is needed.
