Wrap up this easy recipe in just 30 minutes!
Hey guys! How does another 30 minute meal sound? Awesome? Well that is exactly what my version of a Southwest Chicken Wrap is! This baby is packed with loads of flavor and nutrients but it won’t break the bank, your back or your A.C. unit. This Tex-Mex inspired recipe will cure your craving for weeknight Mexican food and you won’t believe how easy it is.
I have so many recipes for our day to day that I wanted something different but not something that would take a long time to make. Because again, weeknights are crucial for us to be able to get to bed early. Some of us are up at 3:30AM! And the rest trickle in at 4AM and 5AM. No one sleeps late here! Therefore I strive to not be cooking long meals that take hours on weekdays.
I knew I wanted something in the Mexican flavor profile but not just the usual tacos or burritos. Although I do love the Chicken Ranch Tacos! Yum! We were having burritos one day and I just kept imagining scenarios of putting things together but it just wasn’t coming together like it normally does. Then I noticed my son inhaling a bag of chili cheese flavored Fritos and it was like an actual lightbulb moment!
Swaps & Specs for Southwest Chicken Wraps:
- The Fritos ended up being that missing component that just really made these wraps special.
- Make it easy by using pre-pulled rotisserie chicken. It will still take seasoning well.
- Use your favorite tortillas just be sure to get large sized ones. You can use flavored ones or keto friendly ones.
- Swap black beans out for pinto or navy beans.
- Use your favorite cheese blend, just be sure it’s freshly grated.
- I like to top mine with sour cream but this can be swapped out for crema or skipped altogether.
- The chili cheese Fritos make this dish but if you are against this, use fried tortilla strips for the crunchy factor.
- Make sure to warm the tortillas before trying to use them. This will prevent them tearing. Use the stove or microwave.
- Make it spicy by adding hot peppers or hot sauce!

Southwest Chicken Wraps
Ingredients
- 1 pack large burrito shells
- 1 bag chili cheese Fritos
Chicken mixture:
- 1 rotisserie chicken, pulled
- 4-5 tbsp taco seasoning divided
- 1 can black beans, drained & rinsed
- 3/4-1 cup ranch dressing
- 3 avocados sliced
- 2 vine ripened tomatoes, diced
- 2 cups colby jack, fresh grated
- 1 bag shredded lettuce
- 1 red onion, diced
Additional optional toppings:
- sour cream
- rojo or verde sauce
- fresh jalapenos, sliced
Instructions
- Start by adding 2-3 tbsp of taco seasoning to ranch dressing. Add chicken to large bowl and add rest of taco seasoning. Mix well. Add black beans and stir until coated.

- Microwave chicken mixture for about one minute of chicken is still warm. If cold, go for two minutes. Heat your tortillas up, whatever your preferred method is.

- The build: Tortilla, sour cream, chicken & beans, cheese, ranch sauce, onion, lettuce, tomato, avocado and fritos. Fold and roll tight.

- Use as much or as little of the toppings as you prefer.
