Make This Amazing Taco Pie in 3 Easy Steps

Hey there! Great to see you back again! This time I’m going to show you my Taco pie recipe. It is soo good, you have to try it! This recipe is great because you can put in your favorite ingredients like corn, avocados, green onions, and black olives just to name a few. Taco Pie can also be topped with your favorite toppings too!

I’ve made this recipe for so long and done it so many different ways that I can tell you, it is a very forgiving recipe. You can’t mess it up! It reminds me of a lasagna with the layers of meat and cheese.

Swaps & Specs

  • I used ground beef in my recipe but you could easily switch it for any other protein such as, ground turkey, cubed chicken or even a meatless option.

  • For seasoning the meat, I used my homemade taco seasoning. Find it here.

  • I selected shredded cheese and a jar of queso. The queso can easily be replaced for a nacho cheese sauce or even one made from scratch.

  • The can of refried beans can be left out if there is an aversion to it but I like it because it adds a base that holds the meat and cheeses in place.

  • I like the can of Green Giant Mexicorn because it is already flavored with peppers and chiles. It adds an extra flavor punch!

  • This dish can be assembled ahead of time and baked off later. Just be careful of the dish you have it in.

  • Taco pie also reheats well the next day as leftovers. I currently never have any leftover to see how it responds to freezing, so I cannot comment on that.

  • Taco pie can be topped with any toppings you wish, my favorite is sour cream and avocado. Other options are: salsa, lettuce, chopped tomato and onion, black olives, crushed tortilla, Doritos or Fritos and chopped green onions.

Layers of soft tortillas, melted cheese, meat and other ingredients become a pile of deliciousness!

Equipment

  • large baking dish 115"x11"

Ingredients
  

  • 2 lbs. ground beef
  • taco seasoning Enough for 2 lbs.
  • 1 can Mexicorn, drained
  • 1 can refried beans
  • 1 can chopped green chiles, drained
  • 1 jar queso cheese
  • 8 8" flour tortillas
  • 2 cups shredded cheese
  • sour cream for garnish

Instructions
 

  • Preheat oven to 350°. Cook ground beef until crumbled and cooked through. Drain. Add corn, chilis, half of queso and Taco seasoning, cook another 5 minutes, turn off heat.
  • Spray a 15"x11" pan with non-stick spray. Place 2 tortillas side by side, in bottom of baking dish. Spread 1/4 of beans on the tortillas. Next add 1/4 of beef mixture across both, level out. Sprinkle 1/4 of cheese over that. Repeat 3 more times.
  • Top with remaining queso and spread across the top, sprinkle with cheese. Bake in oven for 15-20 minutes or until melted through.
  • Slice and serve topped with sour cream and your favorite toppings.
