Make Easy Pulled Pork Burrito Bowls in just 3 steps!
Hey friends! I recently had my little brother tell me he was working in our area. We don’t see each other as often as I would like but when we can, we do. He travels a lot for work and so when I know I will see him I try to cook up something good. Traveling can be rough on our systems and nothing is better or more comforting to me then a home cooked meal at a real table. I chose to make pulled pork burrito bowls this time.
One of the things I love best about this meal is its simple. So easy, you literally set it up and walk away! The crock pot does all the work while you do better things with your time, like visiting with little brothers! (who aren’t very little! LOL)
I’m one of those people that wants to feed others. I love making dishes and watching people experience the first time they try something. Or the face they make when they like something unexpectedly. So when I’m visiting family or when family visits me, I try to do something they probably haven’t had before. A little experimentation never hurt anyone.
Of course though, we all have our favorite dishes that take us right back down memory lane. One of my most favorites is potato salad. Weird right? But my Grandma made the best! She never had a recipe, or at least never one written down and when I’d ask about it, She’d just say it was nothing special. Oh how wrong she was! She’s gone now and I can’t reproduce it but we all remember how fond we were of it. We’ve secretly named her Queen of Potato Salad, which she would probably laugh about and call us ridiculous! LOL!
This is a pull up your chair and let’s talk kind of meal. I use it for bigger crowds and get togethers because of it’s simplicity. I don’t have to be in the kitchen cooking, I can do other things and still have an amazing dinner at the end of the day. Its easy to assemble and serve; all they need is a bowl and a fork! You will love it too because you won’t be worn down from entertaining AND cooking.
The nitty gritty
Delving into this recipe, lets talk about the meat. In my opinion, it needs to be a shoulder roast cut. It can also be labeled as Boston butt, Boston roast or shoulder blade roast. Boneless will cook faster but I’ve used bone in and boneless interchangeably here for years without an issue. Using a loin would not have the same effect and could become dry and overcooked since it is a leaner cut of meat then the shoulder.
In this recipe, it calls for taco seasoning. I haven’t bought any taco seasoning in over 8 years…. So I will include that recipe for you as well in case you wish to try it. You won’t regret it!
Pulled Pork burrito bowls, or burrito bowls for short, are a great slow cooker dish that feeds lots of people. If you have leftovers, the meat/beans mixture will be good frozen for about 4 months. To reheat it, simply dump it in a stockpot or Dutch oven on low heat until thawed. Make the rice before pork is finished, time it to end together.
Top this dish with your favorite fixins’ any way you wish. In my house, usually we top with thick cut cheese, sour cream and avocado. Serve with a side of elotes for a complete meal.
Pulled Pork Burrito Bowls
Equipment
- Slow cooker
Ingredients
- 3-4 lbs. pork shoulder, boneless
- 3 tbsp. taco seasoning
- 15 oz. can pinto beans rinsed and drained
- 4.5 oz. can diced green chiles undrained
- 6-8 cups cooked Spanish rice whichever brand you wish
- 2 cups shredded Mexican cheese bold cut is amazing!
- sour cream
- avocado
- salsa
- shredded lettuce
- chopped onion
Instructions
- Start by readying the crockpot. get it situated where you want it and put a liner in now if you are using one.

- Take the pork and rinse it. Place in crockpot. Rub taco seasoning all over whole roast. If your pork has a fat cap anywhere on it , make sure that it is fat side up. Sprinkle the beans and chiles all around the crockpot. Cover and cook on low for 7-8 hours. It will be closer to 8 hours if bone in roast is used.

- Once the pork is done cooking, shred it using the two forks method. Return it to the crockpot and stir.

- To assemble, place about a cup of cooked Spanish rice in the bottom of a bowl. Next layer with about 1/2-3/4 cup pork mixture. Top with cheese, sour cream and whatever fixins' you like!
