Simple Steps to Loaded Avocado Chicken Salad in Minutes!

Spring is finally here in the Midwest and we are so thrilled to be out of Winter’s cold clutches! So with that we are going to start switching gears to lighter, fresh foods. First up is a recipe that is so simple to make, big on flavor, I’m calling it Loaded Avocado Salad. It’s got all the good things, cheese, bacon, chicken, green onions just to name a few. Plus, you can take a few shortcuts to make this recipe, which of course, I’m going to share with you guys to make it even easier.

My inspiration for this recipe came from eating chicken tortas with avocado which I absolutely LOVE! But I wanted to take it into a fresher route and we are always looking for salads that eat like dinner. So Loaded Avocado Salad it is!

Swaps & Specs for Loaded Avocado Chicken Salad:

  • Any veggies you don’t like, swap for something else or leave it out altogether.

  • You can make this a completely cold salad and skip heating up the ingredients if you want! Just buy canned corn instead of frozen.

  • While it is called Loaded Avocado Chicken Salad, you can leave chicken and bacon out for a meatless option.

  • Season the chicken with your favorite seasoning, I personally like rotisserie seasoning from McCormick and Kinder Woodfire Garlic.

  • If you are dealing with a super picky crowd, skip the Lemon Garlic vinaigrette and use ranch dressing. About 3/4-1 cup should work since it is heavier than the vinaigrette.

  • Leave the garlic lemon vinaigrette out in favor of your favorite ranch dressing to switch up the flavor profile. I would probably use less ranch though because it is heavier. About 1 cup to start and mix.

  • Don’t like lemon? Leave it out and use a few tbsp of vinegar. You really just need an acid here to give a good flavor and balance overall.

  • Assemble all the ingredients ahead of time except the warm ones, keep those separate. Mix up the dressing and keep it in a mason jar or container. When you are ready to eat, heat the chicken, bacon and corn until warm and then mix everything together.

This is the perfect potluck salad for BBQ’s, party’s, tailgating, and so many other occasions. More importantly though, it’s great for the weekdays!! I hope you enjoy this Loaded Avocado Chicken Salad as much as we do or even your own version or it!

Loaded Avocado Salad

Loaded Avocado Chicken Salad

A fresh salad full of chicken, chunks of avocado, cheese, bacon and more with a lemony garlic dressing.

Ingredients
  

Dressing Ingredients:

  • 6 tbsp. olive oil
  • 4 cloves grated garlic
  • 2 lemons, juiced
  • 2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 2-3 tbsp mayo, optional for creamy style dressing

Salad Ingredients:

  • 1 Rotisserie chicken, pulled
  • 5 avocados, chopped into chunks
  • 1 bag frozen corn, cooked
  • 1 lb. thick sliced bacon, cooked & crumbled
  • 3 large eggs hard boiled
  • 1 bunch green onion, diced
  • 2 heads romaine lettuce washed & chopped
  • 2 cups cheddar cheese, shredded
  • 1 can black beans, rinsed
  • 1 tbsp. rotisserie seasoning
  • 1 tbsp Kinders Woodfire Garlic optional
  • 1 cup cherry tomatoes, halved
  • 1 bag flavored tortilla strips,

Instructions
 

  • Get a small pot with 3 eggs in and enough water in it to cover the eggs. Heat on high to boiling, then cover and shut off heat. Let sit for 12 minutes. Once done run under cold water until cooled. Peel and dice the eggs then add to the large salad bowl.
  • Add the ingredients together for the dressing and whisk until well blended. Set aside.
  • Cook the bacon and drain on a paper towel lined plate. Remove all but 1-2 tbsp of the bacon grease from the pan.
  • Add the pulled rotisserie chicken and frozen corn to the pan and heat thru, adding your seasoning here. Once heated, assemble all the ingredients together in the large salad bowl and mix with the dressing. Serve with a crusty bread.

Notes

  • Use cut up chicken tenders to have crispy chicken as an option.
  • Change out whatever veggies you want to customize the salad to your needs.
