Whip up This Awesome Elotes Side Dish in Minutes!
Hey Guys! Happy to be back again for the last installment of Side Dish Saturdays. Today is my version of Elotes, or Mexican street corn. It goes amazing with any Latin inspired main dishes. Heck, my boys will eat it all by itself! It’s That good. I make it two ways. On the cob and deconstructed. Either way is fabulous, but it can be difficult to find good corn on the cob when its out of season.

Elotes on the cob are traditionally done with lime juice, mayo, queso fresco and chile powder. It can be grilled or boiled.
I love the combination of flavors, spicy, creamy, citrus and cheesy all at the same time! When I make it deconstructed, it simply means off the cob. It can be made from fresh, frozen or canned corn. Once you add the other ingredients, all you will know is it tastes good!
When I was trying out different versions in my own kitchen, i finally settled on a similar recipe that has become a staple in our house and a tradition on taco nights! I previously shared my recipe for Taco Seasoning before and that is the main seasoning in this recipe! I told you I use it for so many things! LOL! I also use Cotija cheese instead of Queso Fresco.
Swaps & Specs for elotes:
- Elotes can be done on the cob or off.
- Use cotija cheese or queso fresco. You can also use parmesan! Sounds weird right? Don’t knock it till you try it!
- Season traditional style with chile powder or kick it up a notch with my taco seasoning!
- Grill boil or oven roast corn. We have even fire roasted it before! So good!
- For the deconstructed version, simply cook corn as directed. Add 1/2 cup mayo, 3 tbsp taco seasoning, 1 tsp. lime juice and 3/4 cup cotija cheese. Now these are loose measurements. Play with it. If you like it more tangy, add more lime. More creamy? Add more mayo.

- large pot
- pastry brush
Ingredients
- 6 ears corn on the cob
- 1/2 cup mayo
- 1-2 limes
- 3 tbsp. taco seasoning or chile powder
- 3/4 cup cotija cheese or queso fresco
- 1 stick butter
- 2 tbsp. kosher salt
Instructions
- Bring a large pot of water, butter and salt to a boil. Add corn and cook for 20 minutes or until desired doneness is reached.
- Pull corn out and place on a sheet tray. While still hot spread mayo all over ears with a pastry brush. Next add cheese, Turning to coat it completely.
- Sprinkle with seasoning, turning as you go. Repeat with lime juice. Serve immediately.

Notes
- Use any crumble cheese you wish
- Season with my taco seasoning or use chile powder
