Smothered Breakfast Burritos is a Great Crowd Pleasing Breakfast Recipe!
Hey guys, can you believe January is already over?! What?! Today I want to share with you Smothered Breakfast Burritos. It’s a recipe I developed after watching a video online one morning where this guy was making enchiladas. He was pouring this creamy sauce over the rolled up shells in the pan and inspiration struck! These babies are filled with crumbled sausage, bacon, cheesy scrambled eggs, seasoned diced potatoes and then wrapped up in a tortilla, covered in country white gravy and baked until delicious! Y’all I’m drooling just describing this to you! Haha!
What’s great about this dish is you can customize it to fit your taste and dietary needs so easily there’s no reason NOT to try this recipe! You can even make them with a Tex-Mex theme! The possibilities are endless! Get creative! Make them a different way every time so it doesn’t get boring!

Swaps & Specs: Smothered Breakfast Burritos
- For the meats, I used bacon and breakfast sausage as my combo. You can use chorizo, Canadian bacon, ham, turkey bacon or even steak. Use whatever you want to but try to choose two for a great combination.
- In the eggs, I add American cheese and scrambled them. Use whatever cheese you like, just make sure it’s a good melting cheese. Egg whites can also be subbed in.
- When assembling the tortillas, heat them up for a minute in the microwave and keep them covered with a towel. This will make them more pliable.
- Top each burrito with your favorite cheese before rolling up.
- The potatoes should be diced small and uniform so they all cook at the same time. I use Goya Adobo seasoning on mine but feel free to sub in whatever works for you.
- For the gravy, make it from scratch using the leftover sausage grease by adding 3 tbsps. flour and milk until the right consistency comes out. (About 3-4 cups).
- Gravy alternative is Pioneer makes a quick cooking option. It’s done in a couple minutes and tastes good.

Smothered Breakfast Burritos
Equipment
- 1 large baking dish foil disposable ones works great
Ingredients
- 1 roll mild breakfast sausage
- 3 medium russet potatoes, peeled & diced
- 1 medium onion, diced
- 2 tbsp garlic, minced
- 2 tbsp Goya Adobo seasoning (red top)
- 12 large eggs, whipped with a fork
- 4 slices American cheese, crumbled
- 1 cup bacon, cooked & crumbled
- 2 cups freshly grated cheddar cheese
- 2 packs 8" flour tortillas
- salt and pepper to taste
For the Gravy: If making from scratch, use the following:
- 2-3 tbsp flour
- 3-4 cups milk
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
If making gravy from the packs:
- 3 packs Pioneer Pepper Country Gravy Mix
- any additional ingredients from instructions
Instructions
- Heat oven to 375°. Brown and crumble sausage in a large skillet. Scoop sausage out and place in a large mixing bowl. (Reserve sausage grease and make gravy in this pan if doing it from scratch).
- In a second skillet, start potatoes, onions, garlic and Goya seasoning. Once potatoes are browned and softened, remove them to the same bowl with the sausage.

- In the same pan as the potatoes, add eggs. Season them and add cheese. Cook over medium heat until completely scrambled. Removed and dump into same bowl. Add 2 cups cheese, bacon and salt & pepper. Mix well.

- If you are making the gravy from scratch, go back to the sausage skillet. Heat it up and add the flour. Once ready, slowly add milk and stir until desired thickness is achieved. If making the gravy from the packet, just follow the directions.

- Once all the filling is wrapped in tortillas and placed cut sides down in a baking dish, pour gravy over the top, making sure to cover all the tortillas. Top with any extra cheese if you want. Bake until bubbly, about 20 minutes.

- Serve immediately. Burritos can be assembled up to the part before the gravy goes on and then frozen. Just add 20-25 minutes to the cook time and cover with foil for the first half of cook time.

- use whatever meats and cheese you like, this recipe is totally customizable
- make the gravy from scratch or from a packet to save time
