Easy to Make Queso Dip in Just 3 Steps!

Hey do I have any football fans out there? I have the perfect tailgate or pregame queso dip for all your game day needs! This one pot wonder is done in just 10 minutes but has all day flavor. The best part is it makes a great base recipe so you can add or subtract ingredients as you see fit. What I like about this queso dip is that it reminds me of a mixture of the old school ones I grew up with.

The original one that we mostly had was velveeta and a can of chili. But there was another style. It was Velveeta and a jar of salsa. Now most of the recipes you see online are with Rotel. But the O.G. was with salsa. Don’t bother coming at me about Velveeta not being real cheese. I know. And it’s okay.

For More Than Just Queso Dip

Okay so I know I mentioned football earlier but hey, tis’ the season and all that, right? All joking aside, this dip is great for all occasions. throw it in a crockpot on low to keep it warm and you can munch without a care. Another idea is a steam table, but be careful to stir that way it doesn’t scorch the bottom.

This can also be something that is made and served with tacos or burritos during the week, that’s how simple it is. The ease of the recipe makes it one you can add for more occasions other than parties and gatherings.

Swaps & Specs:

  • Use a roll of sausage that suits your preference. You can make it hotter my choosing a spicy sausage or even swapping for chorizo. (If you use chorizo, know that the color will be different and you will want to make sure drain it.)
  • Make sure you get chili beans and not just red kidney beans. You need the sauce and flavoring. Spice level is again up to you.
  • You can even use the Velveeta Queso Blanco but if you do be wary of you heat level.
  • Rotel is another choice for heat level here. Getting mild or hot instead of original will definitely add heat.
  • Mix it up by adding different types of cheeses!
  • Add cooked veggies like bell peppers, onion, chopped green chiles or jalapenos.
  • Serve with a variety of chips, we like Fritos, Doritos and tortilla chips the best!

We love this recipe and so do our family and friends. With or without utilizing some of the options I’ve given, I hope you too can find a version that works for you!

Queso Dip

This ultra cheesy, meaty dip has just enough heat and seasoning to make to perfect dip for any occasion.

Equipment

  • 1 large pot
  • 1 crockpot optional

Ingredients
  

  • 1 roll sausage mild or spicy
  • 16 oz velveeta, cubed
  • 15 oz chili beans, undrained spice level optional
  • 10 oz rotel tomatoes, undrained spice level optional
  • 8 oz cream cheese, cubed
  • 2 cups queso quesadilla cheese, shredded
  • 1 cup green onion, chopped
  • 2 tbsp ground chili powder
  • 1 tbsp ground cumin
  • 3/4-1 cup milk add as needed

Instructions
 

  • In a large pot, brown sausage and then drain off fat.
  • Add all remaining ingredients except start with 3/4 cups milk, adding more as needed once all the cheese has melted. Add milk until a smooth dipping consistency.
  • Serve immediately or place in a crockpot on warm. Enjoy with Fritos, Doritos, or tortilla chips.

Notes

  • Enjoy with a variety of chips, or even crackers!
 
  • Up the spice level a little or a lot by using spicy sausage, spicy chili beans or spicy Rotel!
 
  • Make this in the crockpot. just brown the meat and place everything into the crockpot.  Cut milk to 1/2 cup and cook on low for 4 hours, stirring occasionally, until melted. If too thick, then you can add milk to thin.
