Better BBQ Chicken Wings in just 3 Easy steps!

Hey guys, I am bringing to you a recently developed recipe. BBQ Chicken Wings in 3 easy steps that will have you wondering why you never tried making wings before! If you are like us, we love chicken wings all year round, not just during football season. I’ve tried so many different recipes but none ever really hit the spot or if they did, the COOKING time was a long process. While this version does need time to marinate, the cook time is fast. And after you try the first one, you will be very thankful for that!

When I’m making wings, I do prep the wings first. What I mean by that is, I go over each wing checking for missed feathers, loose bone or any other unfavorables. Also I like the Just Bare brand of chicken. If you haven’t tried, do it. the taste difference is worth the the price difference. If I can’t find any Just Bare, then I will always go for the free range organic. It’s not a requirement, simply my preference.

Making A Brine For BBQ Chicken:

There are a few different ways to go about this. The method I’m using here is a cold wet brine. Which just means that not heat was involved in making the brine. Now, you can absolutely heat the brine up to a boil, cool down and then put in in the fridge to get cold before adding the chicken to brine. That would make the onion and garlic active more and infuse in the brine but this will add more time to the process. You can also add chopped peppers or chilies in the brine to infuse heat!

For the seasoning, the mix I provided suits my household and complements the sauce I like (honey BBQ). So it really isn’t about that so much as about something that compliments what you are putting on your BBQ wings. A helpful hint is, use a couple of the same spices that are in your sauce whether it is homemade or bought.

Swaps & Specs:

  • Make sure to leave time for the chicken wings to brine. I like doing mine before bed then they have all night and day to brine. You can also do this before you leave for work then it will be ready to grill when you get home!

  • Use your favorite sauce! My favorite is honey BBQ and Parmesan Garlic.

  • Seasonings and brine flavoring can be spiced up easily by adding different chilies or peppers to the brine or the chicken wings themselves.

  • I usually cook my wings on the grill but I do have a Ninja Foodi Grill/air fryer that I made the wings on 2 different times and both times they came out excellent. I used the grill function though, NOT THE AIR FRYER. I’m not sure what the skin texture would be like in an air fryer.

Ingredients
  

  • 2-3 lbs chicken wings, trimmed and cleaned

Brine

  • 1/2 cup sugar
  • 1/2 cup kosher salt
  • 3 tbsp vinegar
  • 3 tbsp red pepper flakes
  • 3 tbsp whole black peppercorns
  • 1/2 large onion, chopped
  • 8 whole garlic cloves

Wing Seasoning

  • 4 tbsp vegetable oil
  • 3 tbsp garlic powder
  • 3 tbsp onion powder
  • 2 tbsp paprika
  • 1.5-2 cups BBq sauce homemade or bought

Instructions
 

  • In a large bowl, add brine ingredients together, mix well until sugar & salt are mostly dissolved. Add the wings and let mixture sit in fridge for at least 8 hours or overnight.
  • Drain the brine. Make sure to remove all the little peppercorns. Pat wings dry then in another bowl, add oil and rest of seasonings to wings. make sure you thoroughly coat them.
  • Grill the wings on medium heat for approximately 20 minutes, turning every 5 minutes. Remove form grill to a bowl, toss in sauce of your choice. Return to grill for about 1 1/2-2 minutes on each side.

  • Make this recipe your own by using your favorite spice blends, BBQ sauces or even brines!
