Make These Mini Taco Cups for You Next Big Gathering!
Hey Y’all! Today I’m bringing you one of our favorite snacks, Mini Taco Cups. These are perfect for so, so many different occasions and seasons. They take only a few minutes to make and are bursting with flavor! Have you been tasked with bringing or making a snack for the big game but tired of the same old thing? Give this recipe a try. The best part is it is completely customizable, so change it to your preference.
When I first saw this recipe, it was almost 20 years ago in some cooking magazine. I’d love to give the proper credit but it has been so long that I honestly don’t remember which one it was. Even a quick internet search yielded no results! Shocking! Since then I have taylored the recipe to fit my tastes. Some times, when I make it I go all out other times I do the bare minimum. Either way, it’s always fast, tasty and gone!

Swaps & Specs:
- The chips is the base of the dish but you can swap it for any other chip that you can stuff.
- Use a vegetarian chili, beans or no bean chili. Or use your leftover homemade chili! This lets you control the heat level too!
- Use pickled or fresh jalapenos. Add as many or as little as you like!
- They can be done with or without the refried beans, so if you are opposed, leave them!
- Try different cheeses, and toppings to make it your own. Mix up a ranch avocado sauce to use instead of the sour cream mixture for some variety. The possibilities are endless.
- Serve with extra sour cream, beans and salsa.
- This is the taco seasoning I use but feel free to use store bought or your own mix.

Mini Taco Cups
Equipment
- 1 Sheet pan
Ingredients
- 1 large bag Tostitos Scoops (about 50) pick the best ones out
- 1 15oz. can chili, with or without beans or use your own
- 1 15oz. can refried beans
- 1 4oz. can chopped, green chiles
- 1 cup sour cream
- 1 1/2 tbsp. taco seasoning
- 8-12 pickled jalapeno slices, chopped add more or less to taste
- 1 cup finely shredded taco blend cheese
- 4 green onions, chopped
- 1 4oz. can black olives, sliced optional for garnish
Instructions
- Set oven to broil. Arrange the best shaped scoops in a single layer on your baking sheet.

- In a small bowl mix sour cream, taco seasoning and jalapenos together until well combined. Place into a sandwich baggie for piping later. Set aside.
- In another small bowl, microwave refried beans for 2-3 minutes or until warm, add green chilis and place into and sandwich baggie. Snip one corner so you can pipe it into the cups better.
- In each cup pipe about 1/2-1 tsp of refried beans into the bottom of each cup. Then spoon the same amount of the chili over that into each cup. Top each cup with a sprinkle of shredded cheese.

- Broil for approximately 2-3 minutes or until the cheese melts and the edges of the cups begin to brown slightly.
- Once cheese is melted and chili is heated through, pipe the sour cream mixture on the cups, sprinkle with green onion and top each cup with one sliced olive.
- Serve immediately and with additional sour cream and salsa!

- Vary the heat by making subtle swaps or adding different peppers.
