This Restaurant Copycat Zuppa Toscana Recipe is Easy and Delicious!

Most of us have been to Olive Garden or in the very least drove by it. It’s a chain restaurant in nearly every big city featuring Italian foods. The majority of the food is good. Personally I think my lasagna is better, but I might be biased! One of my favorites there is Zuppa Toscana. Translation: Tuscan soup. It is a creamy, savory, bowl of deliciousness with crumbled Italian sausage, sliced potatoes and kale.

This copycat version doesn’t disappoint. I found a base recipe in a book called Top Secret Restaurant Recipes by Todd Wilbur. I tweaked the ratios a bit to fit my family’s needs and voila! A perfect version of a classic recipe. Plus, you don’t have to go anywhere. If you want more sausage in yours, add it! More cream? Add it! Making it at home is the perfect chance to truly customize this recipe.

Swaps & Specs:

  • Serve with a salad and breadsticks for a complete meal. Or serve with a pasta dish as a side!

  • This is a set it and forget it kind of recipe so you can enjoy some couch time or whip up another dish to go with it.

  • It reheats perfectly the next day. I have never frozen it before so I am not sure if it would change the texture of the kale and potatoes to mush.

  • Want to spice things up? Add spicy Italian sausage instead of mild or add more pepper flakes.

  • Great for a bread bowl! Make your own or buy from the store, either way is a win!

  • The kale will look like it is way too much. You will be like, did I read that right? Yes you did! Add it. I promise the kale wilts down so far that it becomes the perfect amount.

  • Top with fresh grated parmesan if desired!

  • For the potatoes. Use russet. Normally like a different type of potato, but russet works great here. Simply cut in half lengthwise. Then each halve again lengthwise. Then slice crosswise, about 1/4″ of an inch.

Equipment

  • 8qt stockpot

Ingredients
  

  • 8 1/2 cups chicken broth
  • 1 cup heavy cream
  • 4-5 medium russet potatoes, washed- skin on, sliced thin and quartered.
  • 7-8 cups chopped kale
  • 1 1/2-2 lbs. mild Italian sausage
  • 3/4 tsp. kosher salt
  • 3/4 tsp. crushed red pepper flakes
  • fresh grated parmesan cheese, for topping optional
  • warm Italian bread, for dipping optional

Instructions
 

  • In a large stockpot, brown Italian sausage and break it down into crumbles until cooked thru. Add broth and cream. Cook over medium heat.
  • Add potatoes, kale and spices to soup. Kale will seem like it is too much. It wilts down. Stir to combine. Simmer on low for 2 hours, covered, stirring occasionally.
  • Once soup is done, serve with a crusty bread and topped with some fresh grated parmesan cheese.
